Bureau de Hunch is honoured to deliver our first UK project for the global dining brand Din Tai Fung, also its fourth branch in the UK. Located above the new Crossrail station in the heart of Canary Wharf, the project involved converting a former Indian restaurant into a flagship dining destination.

From the outset, our role was to assist the client’s design team in navigating UK regulations and design guidance. We successfully obtained approvals from the local authority, liaised with the landlord’s retail department to meet Canary Wharf’s requirements, and coordinated closely with consultants including fire safety specialists. Alongside these technical demands, the project required an upgrade of operations and maintenance systems, as well as the introduction of Din Tai Fung’s trademark dumpling-making display kitchen—a signature element that combines function with brand storytelling.

The result is a refined dining environment that balances authentic identity with local context, offering a calm, high-quality guest experience above one of London’s busiest transport hubs.
